Every year, we like to share family traditions with our chocolate family. Last year, it was boxes of bonbons themed around the different dances and acts of The Nutcracker Suite (for those who don’t know, Samantha was a dance teacher and ballerina who performed the Spanish/Hot Chocolate dance in the Portland Ballet’s Nutcracker).
This year, Sam and Tom went through old family cookbooks to find their favorite Christmas and holiday cookies so that they could recreate those flavors as bonbons and truffles. Classics like sugar cookies are recreated with a 34% milk chocolate butter ganache rolled in festive sugar. Peanut butter blossoms are transformed as peanut butter gianduja in 40% milk chocolate with caramelized white chocolate. Raspberry thumbprints cookies became bonbons with a 68% dark chocolate raspberry butter ganache in a 68% dark chocolate shell.
Chocolates were chosen carefully by their own flavors so that we can really accentuate the spirit of the cookie that they represent. We think they’re delicious, and hope you do, too.
