We couldn't decide between Mexican vanilla beans and Madagascar vanilla beans-they are both so wonderful with subtle differences. So, we carefully tried different combinations until we loved our results. We steep our vanilla beans and pods for several days in local, organic cream and make a mouthwatering ganache of real, 35% white chocolate. The little white chocolate domes are amazing. People who tell us they don't like white chocolate often fall in love with this little truffle. Try for yourself!
